60 year old Blewitt Springs bush vine Grenache had 3 hours on skins followed be cool fermentation. Aromatic, dry, and delicate as a pretty in pink ballerina springing across the palate.

60-year-old Grenache vines grown in deep sand on the Wait vineyard high in the Blewitt Springs subregion were hand harvested early specifically for Rose production. The bunches were destemmed and allowed to rest in the press for 3 hours to extract just the right amount of colour, flavour and tannin. Fermentation was carried out at low temperature (12-13C) in stainless steel in order to retain aromatics. The pressings were fermented in seasoned puncheons, and a small percentage of this was blended back with the tank portion . No fining.

“A dusky orangey pink, this was picked extra early, based on the low abv. It is flavour packed, though. Raspberry, smashed strawberry, blood orange, tangerine peel, cinnamon and tamarind. There’s a little grip through the back, acidity coiled within, with a lean that's more savoury than fruit forward, the applications both gastronomic and frivolous.”
