The Fiano comes from two vineyards in McLaren Vale grown by Ben Lacey. One in the Tatachilla sub region of southern McLaren Vale. Only a few kilometres from the sea and almost at sea level, it is a cool maritime influenced area of the Vale. These grapes were pressed and fermented in seasoned white barrels.
The second vineyard is in the Northern and high-altitude region of Seaview in McLaren Vale, with thin red loam over a solid limestone geology. The grapes were harvested with a selective harvester and tipped straight into an open fermenter as whole berries. Fermentation was allowed to occur naturally and ticked away slowly for approx. 3 weeks.
Chenin Blanc is grown on 30 year old vines at the Willamba vineyard in the Blewitt Springs region of McLaren Vale. One of the highest areas of the Vale and about 15km inland. Very mild climate and gully breezes. Grapes were machine harvested in the cool before dawn, and then left briefly on skins, 12 hours, before pressing to a stainless steel tank for fermentation with a light amount of solids.
The final blend was 68% tank fermented and skin contact Fiano, with 32% tank fermented Chenin Blanc.

Chenin Blanc is grown on 30 year old vines at the Willamba vineyard in the Blewitt Springs region of McLaren Vale. One of the highest areas of the Vale and about 15km inland. Very mild climate and gully breezes. Deep rich sand and loam mix over a clay base. Grapes were selectiv® machine harvested in the cool before dawn, and then left briefly on skins, 6 hours, before pressing 50% to a stainless steel tank for fermentation with a light amount of solids, and 50% to be fermented in seasoned oak. The finished wine was stored on lees in seasoned oak for 4 months prior to bottling. No acid additions.

Bright and lifted aromas of lemon zest, white florals and hints of sea spray. Refreshing with delicate flavours of citrus and white stone fruits, the palate has a lovey texture with great drive and a moreish finish.

Only a few kilometres from the sea and almost at sea level, it is a cool maritime influenced area of the Vale. Sandy loam over a limestone base, scattered with ironstone fragments. The other in the Seaview sub region, more northern, inland and elevated sitting on ancient 700 million year old limestone. Grapes were machine harvested using a selectiv® harvester that destems as it picks delivering whole berries to the winery, these were tipped straight into a press. Cool slow tank fermentation was carried out with half the juice, while the other half was wild fermented in seasoned oak. Matured on lees for 4 months prior to bottling. No acid additions, no fining.

Tens of thousands of Fiano whole berries writhe together with zillions of partying yeasties for two weeks in an open fermenter. No intervention except for occasionally stirring the pot and provoking another orgy of fermentation. No fining.

The grapes were harvested with a selectiv® harvester and tipped straight into small open fermenters as whole berries. Fermentation was allowed to occur naturally using the wild yeasts native to the vineyard. The ferment was allowed to tick away slowly until dryness in a coolroom at 12-13C which took approx. 3 weeks, when it was pressed to seasoned Hogs Heads for 8 months maturation on lees prior to bottling. No fining or acid additions.

60 year old Blewitt Springs bush vine Grenache had 3 hours on skins followed be cool fermentation. Aromatic, dry, and delicate as a pretty in pink ballerina springing across the palate.
60-year-old Grenache vines grown in deep sand on the Wait vineyard high in the Blewitt Springs subregion were hand harvested early specifically for Rose production. The bunches were destemmed and allowed to rest in the press for 3 hours to extract just the right amount of colour, flavour and tannin. Fermentation was carried out at low temperature (12-13C) in stainless steel in order to retain aromatics. The pressings were fermented in seasoned puncheons, and a small percentage of this was blended back with the tank portion . No fining.

“A dusky orangey pink, this was picked extra early, based on the low abv. It is flavour packed, though. Raspberry, smashed strawberry, blood orange, tangerine peel, cinnamon and tamarind. There’s a little grip through the back, acidity coiled within, with a lean that's more savoury than fruit forward, the applications both gastronomic and frivolous.”

A blend of three distinct bush vine Grenache vineyards, 15% whole bunch, hand-plunged open fermenters, no fining or preservatives. Lifted and Luscious, fruit driven with a structured finish.
Small portions of three distinct bush vine Grenache vineyards were blended to produce this joven style. One from the low altitude and coastal Lacey vineyard in the Tatachilla subregion, another from young vines in the elevated Seaview subregion, and an 60-year-old bush vine vineyard in Blewitt Springs planted on deep sand. The individual parcels were fermented separately; all harvested by hand and gently destemmed to give whole berry ferments, 15% whole bunches were added to the bottom of each ferment to begin fermenting carbonically, hand plunged in small open fermenters for two weeks. Bottled after 3 months in seasoned puncheons. No fining or sulphur additions.

Produced from a single vineyard just east of the township of McLaren Vale in an ancient river bed. Picked early to retain the natural acidity and freshness. Destemmed only, whole berries in small open fermenters following a 4-day cold soak. Wild fermentation allowed to start for a few days then over seeded with cultured yeast. Total time on skins 14 days. Pressed to older seasoned small format oak where it was matured for 6 months prior to bottling. No fining. Minimal additions.

Bush vine Grenache stars in this original blend, Shiraz softens the mid palate and Nero brings an Italian twist. Hand-picked, whole berry, small batch open ferments, aged in seasoned puncheons.
Grenache (77%) from the Lacey vineyard in the Tatachilla sub region of southern McLaren Vale. Bush vines planted on their own roots from cuttings taken from old Barossa Grenache. Deep alluvial sand over a clay base, unirrigated. Shiraz (13%) from the same vineyard, but higher up on the hill with sandy loam over limestone base scattered with ironstone fragments, 1654 clone on its own roots. Nero (10%) from the Petrucci vineyard east of the McLaren Vale township in an ancient riverbed.
Grenache was handpicked, destemmed only, open fermented with 15% whole bunches. Cultured yeast, 14-day ferment, pressed to seasoned Puncheons.
Shiraz was machine harvested with a Selectiv® harvester and transferred directly to an open fermenter without destemming/crushing or pumping. Cultured yeast, 14-day ferment, pressed to seasoned oak.
Nero was hand harvested at 14 baume to capture bright fruit and a softer tannin spectrum.

“The paler colour suggests grenache is in the majority. So too do the lifted red cranberry, cherry and wild raspberry notes. The other varieties speak more on the palate, with a sarsaparilla/amaro twist in counterpoint to the fleshy, dark-fruited mid-palate. There’s a pleasing tang to the finish, with bitter herbs, sour cherry, marzipan and a zesty compact between fine tannin and peppy acidity.”

A medium to full bodied Shiraz, bridging old style charm and power with new style freshness and structure.
Fruit from the Lacey vineyard in the Tatachilla sub region of southern McLaren Vale. Sandy Loam over limestone base scattered with ironstone fragments, 1654 clone vines planted on their own roots. Fruit was machine harvested by a Pelenc Selectiv® harvester with onboard de-stemmer, this resulted in the grapes being delivered straight to the open fermenter requiring no further destemming or crushing. Whole berries, cultured yeast, hand plunged for 14 days then gently pressed to seasoned French Hogs Heads plus a new French Puncheon and Hogs Head (15% overall). Natural malolactic fermentation occurred, aged for 24 months prior to bottling.

Our Bush Vine Grenache really shows how well McLaren Vale and Grenache are suited. It is a complex and powerful wine, where fresh wild berries, cherry and red liquorice intertwine with dried herbs, rustic spice and fine boned tannins, all held together by a refreshing acidity.
This is the first release of this wine, having worked with the fruit for a few years to best figure out how to manage the block and ferments.
A single vineyard bush vine block on the outskirts of McLaren Flat, right on the border of the famous Blewitt Springs Sand and incredibly complex Kurrajong geologies. The vines are 60 years old and dry grown.
Very low yielding vines, handpicked. 20% whole bunch to bottom of fermenter, with destemmed whole berries on top. Two weeks gentle hand plunge, matured in seasoned French puncheons for 12 months.

“Though the inaugural release, Alex Sherrah worked with the fruit prior, getting its measure. From 60-year-old bush vines in McLaren Flat, this walks a nice line, with some of the typical generosity of the district and the express freshness of the cool year allied with complexing spice notes. Cherry and wild raspberry, red plum, white pepper, a dusty earthiness. There’s fine but purposeful tannin and a pleasing raspberry seed tang. It’s intense but oh so vital. Very nice.”

Premium Shiraz from the Lacey vineyard in the ancient northern hills. Whole berry, ultra-small batch open ferment. Hand plunged for two weeks. Matured in a new French oak puncheon.
No fining, minimal filtration. Only 52 dozen produced.
Deep red with a ruby hue. Aromas of dense blue fruits, fresh plum and spice. The palate is rich and mouth filling, with dark red and black berries. Fine grained French oak adds to the complexity with lingering cinnamon and toasted spices. A full-bodied wine designed for ageing.
Select fruit from the Lacey vineyard in the Seaview sub region of northern McLaren Vale. The entire block is only 0.11 hectares and 188 vines, producing about 700kg of fruit. Red brown earth over limestone base, 700 million years old, producing structural wines with fine boned tannins. Selectiv® harvested and transferred directly to open fermenter with no destemming/crushing or pumping in order to maintain the whole berries. Cultured yeast used, 14-day open fermentation, hand plunged. Pressed to a single new French puncheon (500L) where it was matured for 30 months. Bottle aged for a minimum of 12 months before release.

A fresh take on a white Port
This fortified Chenin Blanc is made with pure fresh unadulterated Chenin Blanc juice from a tiny vineyard in Blewitt Springs. The juice was allowed to ferment a couple of baume before being fortified with clear grape spirit to produce this seductively sweet and alluring elixir.
Enjoy chilled on its own, or as a refreshing spritz poured over ice with a touch of soda water.

Our Reserve wines are an expression of two amazing vineyard sites in McLaren Vale, both special in their own way and enhancing the expression of the variety grown on them.
The Reserve Shiraz comes from Lacey vineyard in the Seaview region in the most north-west hills in the Vale. A 700 million year old base of siltstone, sandstone and limestone with a thin layer of sandy loam and shattered rock fragments on the surface.
This is tough ground and really pushes the vines to produce very small compact bunches with tiny berries, resulting in concentrated fruit flavour and tannin profile.
The vineyard itself is tiny with only about 150 vines capable of producing between 6-800kg of fruit per year. This is enough to fill a new French oak Puncheon (500L) where we leave the wine to mature for 2 years, prior to bottling and cellar ageing for at least another 2 years prior to release.
The Bush Vine Grenache comes from Gowers vineyard in a beautiful stretch of ground North East of McLaren Flat and on the edge of the Blewitt Springs subregion and the foothills that surround McLaren Vale.
These hills are riddled with fault lines and have twice been uplifted to the height of Everest and eroded twice, creating an amazing rubble at the base consisting of rocks from all eons. This rubble has mixed with the soft beach like Blewitt Springs sand to create the perfect environment for Grenache. The sandy rocky soil profile really shines through in the wine, as an elegant yet powerful tannin profile and persistence on the finish.
The fruit is hand-picked from two distinct sites in the same vineyard and fermented with 20% whole bunches under whole berries in small open fermenters. Aged in 2 year old French puncheons for 18 months prior to bottling.
These wines show the power and concentration of Shiraz and Grenache in McLaren Vale, but also that the tannin profile, acidity and structure of these wines can be elegant and intense without being too big and heavy.
